Cody Candelario’s Burnt Honey and Bruleed Brie Croissant

Cody Candelario’s Burnt Honey and Bruleed Brie Croissant

Ingredients

2 croissants
1.5 tablespoons of New Zealand Mānuka honey
1/2 tablespoon butter
1 metric pinch of salt
1/4 cup or 1/2 a fistful of brie
1/4 cup sugar (for dusting)
1/4 cup toasted pumpkin seeds
1 cup Made with Care marinated cherries
1 pinch of fresh tarragon leaves (or thyme & mint also work)

Method

Step 1
Layer honey first, on the croissant, then butter second.
Step 2
Cook on medium high until crispy.
Step 3
Top with a thick coating of brie and a light dusting of sugar
Step 4
Brulee with a blowtorch until a caramel color forms.
Step 5
Top with the marinated cherries, pumpkin seeds, tarragon & a pinch of salt
